Randall Ercanbrack climbs Mt. Everest every year. »

What is Randall’s biggest tip for someone who wants to enjoy life?

MOVE!

In order to be ready for his yearly trips to Mt. Everest (and other peaks!), Randall must train continuously throughout the year. For Randall, it’s not about obligation but about enjoyment. One of the reasons Randall loves to climb Mt. Everest every year is the training he is able to participate in during the rest of the year. He climbs local mountains in Utah, such as Y Mountain and Cascade Mountain, and he also climbs mountains in Arizona while visiting family there. In addition to enjoying climbing, he loves meeting new people and making new friends on his climbs. He likes talking to people about their own interests and learning from them. Randall has friends from all over the world thanks to his passion for climbing.

Randall likes to include his family in his adventures as well. He has traveled worldwide with his son, and his daughter traveled to Mt. Everest with him for the first time this year. When his grandchildren are old enough, Randall wants to take them to Everest too! For now, while his grandchildren are young, he encourages them to be active. He likes to spend time outdoors with them — hiking, biking, and cross-country skiing. He hopes to instill in them a love for an active life and for nature.

Benefits of whole food snacks.
Eating whole foods is good for us in many ways — whole foods contain more nutrients and minerals than processed foods, they contain more fiber and beneficial fats, and the combination of nutrients in whole foods works synergistically to help prevent diseases. We’ve all experienced the need for quick and easy snacks that we can eat while working, on the road, between errands, or simply when we’re in a rush! And not to mention, just when we’re in a snacking mood!

Snacking strategy: prepare your own grab-and-go bags.
Here are some options that are healthy as well as fast and easy to prepare and pack:Whole food snack ideas
- Nuts. The best options are raw or dry roasted or toasted. Get whatever kind you like (because you won’t eat it if you don’t like it, so there’s no use in that!), whether you like mixed nuts, cashews, almonds, peanuts, etc.
- Fruit. This may seem obvious or boring, but it doesn’t have to be! Think of all of the possibilities beyond apples and bananas (which are still good choices, of course), like oranges, plums, pears (Asian pears are a personal favorite), grapes, watermelon, mango, pineapple, cantaloupe, tomatoes (cherry and grape tomatoes are especially great for snacking), honeydew, berries, cherries, etc. Take advantage of seasonal choices to add some variety! Dried fruit can also be a good option, or think of freezing some. Frozen grapes are delicious!
- Hard-boiled eggs. Since they will keep in the fridge for up to a week, you can make a larger batch beforehand and store them until needed.
- Vegetables. For snacking or grabbing on the go, raw vegetables are an easy option, and they travel well for the most part, so it’s okay if they slip to the bottom of your bag! Some easy go-to vegetable snacks are carrots, broccoli, cucumbers, cauliflower, celery, and sugar snap peas. Dips like hummus can change up the taste too.

Bad Fats
Fats can have a bad reputation, but some fats are good for you and are actually necessary for your body to function well. It’s true that some fats are detrimental to your health; hydrogenated oils are by far the worst offenders: found in many commercially-produced foods, they can lead to multiple health problems, including heart disease and cancer.  Avoid eating foods containing hydrogenated oils.  Period.  We will cover the topic of bad fats in detail in another article, so watch for that in your inbox in the future!

Beneficial Fats
Beneficial fats are necessary for the absorption of certain vitamins.  They also provide your body with energy and can help you achieve feelings of satiety.  Beneficial fats are critical to the health of your cell membranes.  Healthy cell membranes are the foundation of good health (and conversely, degenerative diseases are often linked to poor cell membrane quality).  Healthy cell membranes allow for the exchange of nutrients.  Good fats are also indispensable for healthy skin.  A healthy cell membrane helps your skin cells retain more water and nutrients and allows cell waste to pass out, all of which is aided by fatty acids.  Cells that perform these functions well contribute to younger looking skin, and good cell exchange means less acne too.There are many types of beneficial dietary fats.  Among them,monounsaturated fat improves your blood cholesterol levels, which can decrease your risk of heart disease.  It may also benefit insulin levels and blood sugar control, which is especially helpful for those with diabetes.  Monounsaturated fat lowers LDL (bad) cholesterol and boosts HDL (good) cholesterol.  Polyunsaturated fat also helps improve blood cholesterol levels and can decrease your risk of heart disease, and studies show it may also decrease the risk of developing type 2 diabetes.  It can lower total and LDL cholesterol.  Omega-3 fatty acids, a type of polyunsaturated fat, can decrease the risk of coronary artery disease, protect against irregular heartbeats, fight inflammation, aid in lowering blood pressure levels, and are essential in maintaining the essential myelin sheath that covers neuron axons.

- Cod liver oil: Cod liver oil is a nutritional powerhouse, rich in omega-3s and fat-soluble vitamins.  It’s been shown to improve health in many ways, including lowering high blood pressure.
- Coconut oil: Coconut oil is beneficial because of its medium-chain fatty acids (MCFA), including healthy fats, lauric acid, caprylic acid, and capric acid.  It has a high smoke point, which makes it a good cooking oil.
- Nuts: Walnuts contain polyunsaturated fat, while almonds, peanuts, hazelnuts, macadamia nuts, cashews, and pecans contain monounsaturated fat.  Nuts are a great, easy source of beneficial fats because they can not only be added to other dishes, but are also easy to pack and snack on!  You can also receive the benefits of unsaturated fats from nut butters like peanut butter or almond butter.
- Seeds: sesame seeds, pumpkin seeds, sunflower seeds, and flaxseed are all sources of polyunsaturated fat.  Like nuts, they can be added to dishes or eaten as snacks — whichever you prefer!

The most important thing you can do for your health (hint: even more important than Proselem!) »

Hydrogenated oils and their derivatives (i.e. mono- and di-glycerides etc) compromise the integrity of ALL YOUR CELLS* and lead to diabetes, cancer, obesity, heart disease, premature aging, fertility problems, the diagnosed “need” for hip or knee replacement and many inflammatory and/or degenerative conditions.

Hydrogenated oils are a man-made ingredient present in many industrial foods. Hydrogenated oils are single-handedly responsible for more disease, in the USA, than any other ingredient. Hydrogenated oils are truly public enemy #1. The most important thing you can do for your health is to BAN them!

Nowadays, avoiding hydrogenated oils and mono- and di-glicerydes requires resolve and effort. Here are some strategies:

- read ingredient lists. If the words “hydrogenated” or “mono- and di-glicerydes” (or some variation) are listed in the ingredient list, BAN the item!

- spend more time in the kitchen! Cook from fresh, simple, unprocessed ingredients, including lots of fresh vegetables! If you use boxed, bottled, canned or other industrial ingredients, check the label and make sure they are free from the words mentioned above.

- when eating out, choose restaurants that serve local food prepared from scratch. If eating at a chain restaurant, stick to dishes most likely to have been prepared from scratch and that contain a lot of raw vegetables. Avoid industrially prepared dishes, sauces and desserts unless you can see the ingredient list (good luck with that).

- Typically, most hotel free “breakfasts” are loaded with hydrogenated oils. I personally snuck into the “kitchen” of one such breakfast area and looked at the labels (with the complicity of a hotel employee). As expected, most foods offered were industrial, pre-made and contained hydrogenated oils. Among the guilty offerings: scrambled eggs!!, all baked goods, waffle mix, hot cocoa, gravy, all bread, muffins, bagels, coffee creamer. In addition, the bacon had nitrite and the yogurt had high fructose corn syrup. Good news: the bananas are real!!

- Typically, the following foods contain hydrogenated oils: industrial baked goods (breads, donuts, waffles, rolls, pizza dough, bread sticks, cakes), industrial sauces, industrial ice cream, industrial peanut butter, most crackers and industrial cookies, some meal replacement powders, most hot cocoa powders, industrial coffee creamer, and so many more…

A little Q & A about hydrogenated oils:

Q: Why are hydrogenated oils used in foods?

A: Because hydrogenated oils are CHEAP and increase PROFITS. Your health is irrelevant, at best.

Q: Are foods containing hydrogenated oils delicious?

A: No. Hydrogenated oils makes products more profitable for manufacturers, not more delicious for you.

Q: Do I need to give up my favorite treats such as ice cream, cookies, cakes, crackers, breads etc?

A: No! You can still have your treats. Just be vigilant and either make them yourself (delicious!!) or buy commercial versions that are free from hydrogenated oils and/or mono- and di-glycerides.

While you’re at it, ban high fructose corn syrup and nitrites from your diet. They will be the focus of a later article.

BOTTOM LINE: bad ingredients such as hydrogenated oils are added to foods NOT to make them delicious but to make them more profitable!! Do not fall for it. Boycott hydrogenated oils. It is a great first step to ensuring long-lasting health and freedom from the ailments that plague America today.

Eliminating these poisons from your diet is, unequivocally, the most important thing you can do for your health. Once you have done that, further empower your cells by taking cod liver oil or fish oil every day and a whole food bioavailable synergistic antioxidant such as Proselem.
